  • 1 shallot, diced
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 3/4 cup dry white grape juice
  • 2 cups heavy cream
  • 2 tsp old bay seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley and parmesan cheese for garnish
  • 12 ounces cheese ravioli

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add the shallots and sauté until soft (about 3 minutes). Stir in the minced garlic and cook for an additional minute.
  2. Incorporate the dried thyme and basil, cooking until fragrant (about 1 minute).
  3. Pour in the dry white grape juice, allowing it to reduce slightly (1-2 minutes).
  4. Gradually mix in the heavy cream along with the old bay seasoning. Bring to a simmer and let thicken for about 10 minutes.
  5. Meanwhile, cook the cheese ravioli according to package instructions.
  6. Once sauce thickens, gently fold in cooked lobster pieces (or chicken) and cook for another 5 minutes. Adjust seasoning if needed.
  7. Serve ravioli topped generously with sauce and garnished with parsley and parmesan.
